CHATEAU D'AUSSIERES (CORBIERES)

Château d'Aussières is located near Narbonne, in the Corbières in the microclimate of Fontfroide and Boutenac. Château d'Aussières has been since the Roman era, one of the great estates of the Languedoc. In the Middle Ages, it belonged to the celebrated Abbey of Fontfroide, its neighbor. With its exceptional location and terroir and by the force of its history, the Château d'Aussières is, a wild and natural property of intense and powerful beauty.

This wine is very dark, almost black, garnet color. The nose is subtle but has superb depth, perfectly integrated, almost imperceptible woodiness. It possesses a hint of blackcurrants, with an immediate sensation of density. The wine develops on the palate for a long time. It is full-bodied, without being aggressive.
TILLMAN MERLOT OAK KNOLL NAPA RESERVE

This wine is dark garnet in color. The nose opens with oak, and some plumy black current and sweet cherry with a hint of vanilla and licorice.

The palate has tastes of blackberry over chili pepper, with a bit of a hot finish which over time evolves to also have a slight a taste of eucalyptus.

This is a wine to enjoy with food and I recommend decanting. Not an unforgettable Merlot.

HAYWOOD ESTATE ZINFANDEL MORNING SUN

The grapes were harvested at 28.4 degrees brix, and carefully sorted. The wine was fermented in stainless steel with about 50% whole berries at a must temperature of 82-86°F.

The wine was aged in a mixture of 20% new American oak, 40% 2- and 3-year-old French oak, and 40% neutral American oak for a period of 19 months, and racked three times prior to bottling.

The Morning Sun Zinfandel is full and round with flavors of raspberry and white pepper enhancing its rich texture and spice finish.

MAHONEY VINEYARDS CHARDONNAY
GAVIN VINEYARD

2013 San Francisco Chronicle Wine Competition GOLD MEDAL Winner.

The Gavin Vineyard, named for Kathy’s family, comprises two blocks adjacent to the winery.   These vines produce low yields of fruit with concentrated flavors.   We harvested into small bins and went directly to press with whole clusters to minimize handling.  Gentle pressing, a short settling period and barrel fermentation with a wide array of yeasts helped create complexity while preserving fruit character.  Extended aging sur lie added richness and helped integrate French oak notes with the fruit.

This complex wine has forward citrus and Granny Smith apple notes layered with yeasty toast and sweet oak.
